Why primary granules matter

Market standard is primary granulation. The granules are produced on the same production line and in parallel with lecithin powder. They are created directly within the production process. Such granules are compact, with an even, coarse surface. Primary granulation, hence, ensures stable and visually consistent results that meet market expectations for stability, colour, and taste. 

Most manufacturers rely on secondary granulation. This production process starts with deoiled lecithin powder that is compacted by secondary agglomeration, typically with addition of water. Even if such a procedure uncouples granules production from deoiling process and provides somewhat more flexibility, it carries a higher risk of contamination, oxidation, and visual inconsistency. Additionally, secondary production granules often obtain an undesirable, glassy-type surface, which make them clearly distinguishable from the higher quality primary granules market standard.

Most granules today are still soy-based. This restriction to an allergenic plant source is primarily due to historical reasons. Soy was, and still is, the most commonly used plant source for producing lecithin. Until the early 2000s, sunflower and rapeseed lecithin were used only to a very limited extent in food production. Accordingly, efficacy and clinical studies, conducted primarily in the 1980s and 90s, are based almost exclusively on soy.
